- 1.5 tablespoons melted coconut oil
- 3 large eggs
- ¼ cup milk any kind
- 2 tablespoons mashed ripe banana
- 2 tablespoons maple syrup
- ¼ teaspoon ground cinnamon
- 1 tablespoon drippy peanut butter
- Pinch salt
- 4 slices sourdough bread
- ¼ cup chopped chocolate pieces
- 2 tablespoons chopped salted and roasted walnuts
- 1 banana sliced into rounds
- 1.5 tablespoons melted coconut oil
Preheat the air fryer to 370ºF and add the melted coconut oil to the bottom of the air fryer.
Whisk the eggs in a large bowl and then add the milk, mashed banana, maple syrup, cinnamon, peanut butter, and salt to the eggs and whisk until combined. Pour the egg mixture into a baking dish or pan.
Dip each piece of bread into the egg mixture. Flipping the bread over and allowing the egg mixture to soak into the bread.
Place two slices of french toast in the air fryer and cook the french toast for 4 minutes on each side until golden brown. Remove the french toast from the air fryer and sprinkle the chocolate over the hot french toast, so it softens. Top the chocolate with chopped walnuts and sliced bananas.
Repeat step 4 with the other pieces of french toast.
- Some air fryers may be able to fit all four pieces of french toast.
- This recipe is based on Ben & Jerry’s ice cream flavor. If you want different toppings, go for it.
- It was helpful to use a metal spatula to flip the french toast over.
