Instructions

  • Place all of the ingredients (except for shredded coconut) into a slow cooker and mix to combine. Cook on high for 2 hours or on low for 6-8. Stir every once in a while.
  • When oatmeal is to your preferred consistency, stir in shredded coconut.
  • Place in a bowl and to top with melted chocolate and date caramel.* Option to serve with a splash of unsweetened coconut milk.
  • Enjoy!

Notes

  • This recipe was slightly adjusted to use regular steel cut oats and not quick-cooking steel cut oats on Feb 29, 2024.
  • If you’ve never made homemade date caramel, now is the time! All you have to do is food process dates and a little bit of water. The softer the dates, the better! It tastes like caramel heaven, but it’s made with 100% natural sugars. WINNING.
  • We love how these crockpot steel cut oats taste served with a splash of milk (or almond milk) on top. It makes it extra creamy and delicious!
