Line a baking sheet with parchment paper and set aside.
In a large bowl, combine together the Greek yogurt, maple syrup, and cocoa powder. Mix until the cocoa powder is completely incorporated. Add 1 cup of chocolate granola and mix again.
Pour the Greek yogurt mixture over the parchment paper and spread the mixture evenly across the baking sheet until the Greek yogurt is about ¼-inch thick. Spread the sliced strawberries and the last ¼ cup of the granola over the top of the yogurt and gently press them into the yogurt.
Place the chocolate chips in a microwave-safe bowl and microwave on high for 20-second increments for 1 minute or until melted and glossy. Be sure to stir them every 20 seconds.
Drizzle the melted chocolate over the top of all of the ingredients and then place the baking sheet into the freezer for at least 2 hours or until the yogurt has completely frozen.
Remove the baking sheet from the freezer and gently break the frozen yogurt bark into pieces and place them in a freezer-safe container or bag and store them in the freezer until served.
- We used 5% Greek yogurt, but you can use whatever plain yogurt you would like.
- The mixture should be thick and creamy. If the cocoa powder is not mixing in, you can add more yogurt to add more moisture.
- If your freezer isn’t large enough for a baking sheet, you can use two large plates lined with parchment paper instead.
- Feel free to use other berries if you’d like.
