Over Easy Eggs
Our over easy eggs recipe is a no-fail recipe to get a perfectly runny yolk every time. Cook your eggs over medium/low just until the eggs begin to set (around 2 minutes), then flip and cook for 30 more seconds.

- 4 large eggs
- 2 tablespoons unsalted butter
Heat a non-stick frying pan over medium/low heat (8-inch or 10–inch work best). Add butter.
When the butter has melted, crack the eggs into the pan. Try not to overcrowd the pan with more than 2 eggs.
Cook the eggs over medium/low heat for 2 minutes or until the egg white begins to set, but isn’t completely cooked.
Use a spatula to flip the eggs and let them cook for an additional 30 seconds to allow the white to cook but not the yolk. The yolk should be runny.
Remove the eggs from the pan and repeat with the remaining eggs.
Remove the eggs from the pan and enjoy with salt and pepper.
- We tested this recipe with large eggs. A medium egg or extra large egg will have a different cook time.
- Times may vary depending on the stovetop. The goal is for the white to cook enough to flip and barely let the egg stay in the skillet. The goal is just to allow the yolk to become stable enough to move to a plate but stay runny.
